Recipe: Humble Hummus Recipe
This makes a healthy and easy dip, snack or side dish and always tastes better when you make it yourself! Hummus is a fantastic way to incorporate more legumes into your diet increasing your plant-based fibre, iron and protein.
Ingredients:
1 can chick peas or alternatively can use 125g dried chick peas soak over night and then boil for 1 hour
1 tablespoon tahini
juice of 1 lemon
2-3 garlic cloves
1 teaspoon salt
pinch of cumin
water
dash of cumin and paprika and olive oil to decorate/garnish
Prep time: 10mins
Method:
Blend chick peas in a food processor with tahini, lemon juice, garlic and salt. This will take a good 5 minutes but keep an eye on the consistency and add water as required until it is as smooth/lumpy as you like it.
Add salt to taste.
Transfer to a serving dish and add a dash of cumin and paprika on top followed by a splash of olive oil.
