Recipe: Christmas Granola

I love to give edible gifts at Christmas and this spiced and Christmassy granola is the perfect gift!


INGREDIENTS

* 3 1/4 cups oats

* 1 3/4 cups nuts (I used almonds, cashews and hazelnuts)
* 1/4 tsp sea salt
* 1/2 Tbsp ground cinnamon
* 3/4 tsp ground ginger
* 1 pinch ground cloves * 1/4 cup coconut oil, melted
* 1/3 cup maple syrup * 2 Tbsp molasses
* 1 tsp vanilla extract

METHOD


1. Preheat oven to 170 degrees C.
2. Mix the oats, nuts, salt, cinnamon, ginger and cloves ingredients together in a large bowl.
3. In a small bowl mix the coconut oil, maple syrup, molasses and vanilla extract.
4. Pour over the dry ingredients and mix well.
5. Spread the mixture evenly onto a a large baking sheet and bake for approximately 20 minutes, stirring so it doesn’t burn.
6. Once the granola is golden brown remove from the oven and let cool completely on the pan before storing in an air-tight container.
