* 1 head cauliflower chopped into floretsโฃ

* 1/2 red onion, sliced โฃ

* 2 Tbsp olive oil โฃ

* Salt and pepper โฃ

* 1/2 bunch parsley โฃ

* 1/3 cup tahini โฃ

* 1/3 cup water โฃ

* 1/4 cup lemon juice โฃ

* 2 cloves garlic, crushed โฃ

* 1/2 tsp cumin โฃ

* 1/4 tsp cayenne โฃ

* 1/4 tsp salt โฃ

* 1 can chickpeas โฃ

* 1 Tbsp olive oil โฃ

* 1/2 tsp smoked paprika โฃ

* 1/4 tsp garlic powder โฃ

* 1/8 tsp cayenne โฃ

* Salt and Pepper to taste โฃ

* Preheat the oven to 200ยบC โฃ

* Put cauliflower & red onion slices on a large baking sheet, drizzle with oil, add salt and pepper. Toss until coated in oil, salt, and pepperโฃ

* Roast for 20 mins, stir, & return to the oven, to roast for an 10-15 mins more or until tender and starting to brown. Let the cauliflower cool slightlyโฃ

* Meanwhile make the dressing by blending tahini, water, lemon juice, garlic, cumin, cayenne, and salt until smooth. Refrigerate until ready to serve.โฃ

* Drain & rinse the can of chickpeas and add to a pan with the oil, paprika, cayenne, and pinch of salt and pepper. Stir & cook over medium heat for 5 mins, or until they sizzle and become slightly crispy. Remove from the heat.โฃ

* Chop the parsley leaves into small pieces โฃ

* Combine the roasted cauliflower and onions in a bowl with the spiced chickpeas and chopped parsley. Drizzle the lemon tahini dressing over top, and toss to combine. โฃ

* Serve warm or cold and ๐„๐๐‰๐Ž๐˜!โฃ
