Recipe: Peanut Butter Balls
Don't you just love it when you remember an old recipe you used to make all the time and haven't done for ages!?! This is so simple and easy and the chocolate coating makes them feel like a little piece of luxury!
The great thing about making balls like this is you can use any nut butter you like and could even add other things like coconut, cranberries or other dried fruit, orange zest...the list goes on.

Number of servings: 15-20 balls
Preparation and cooking time: 20 minutes
Ingredients
5 dates
2 tablespoons oats
1/2 cup peanut butter
1 tbsp butter or coconut oil
1/2 cup dark chocolate
Method
Pulse the dates in a food processor until finely chopped and form a sticky ball.
Add the oats and pulse again until combined.
Add peanut butter and pulse until combined. If it is too oily then add a bit more oats.
Scoop out a heaped teaspoon of peanut butter dough and roll into a ball, and place on baking paper.
Freeze until firm
Melt the chocolate and butter or oil in a bowl (I do it in the microwave for about 30 seconds, but keep an eye on it)
Then dip the balls into the melted chocolate and roll until covered.
Place onto baking paper and repeat for all. Then freeze until hard.
Top tips
These can be stored in the fridge or freezer.
Add other ingredients of your choice to the balls eg other dried fruit such as cranberries or coat in dessicated coconut.
