Recipe: Lemon and Fennel Seed Biscuits
As requested, here’s the recipe for the delicious lemon and fennel biscuits I have been eating this week. They are full of middle eastern flavours and remind me of family times together. I made these with the kids who absolutely loved rolling the dough into sausages and making the little circles. It’s a bit like play dough! They go great with a cup of tea or coffee too! INGREDIENTS:
500g plain flour
14g instant yeast
1 tbsp baking powder
125g golden caster sugar
2 eggs
100ml olive oil
Grated zest of 1 lemon
1 tbsp fennel seeds
50ml warm milk
1 egg yolk, beaten
Sesame seeds
METHOD:
Put the flour, yeast, baking powder and sugar in bowl and mix together. This can be done in a stand mixer with a dough hook.
Add the eggs one at a time and continue mixing.
Pour in the olive oil and mix.
Add the lemon zest, fennel seeds and mix.
Pour in the milk and knead until it is a sticky dough. Add some water if needed (about 75ml).
Flour a clean surface and turnout the dough, rolling it into a long, thin log about as wide as your little finger. Cut the log into 4cm slices and roll into a sausage shape and join the 2 ends together to form a circle.
Place on a floured baking tray, cover and set aside to rise for 1 hour.
Preheat the oven to 180 degrees C.
Brush the circles with beaten egg and sprinkle with some sesame seeds.
Bake for 20-25 minutes until golden brown.
Cool and then ENJOY!!
