Recipe: Citrus Roasted Salmon

This roasted salmon recipe is a simple way to prepare perfectly cooked salmon. Sometimes simple is best! Not only is salmon a great source of protein, but it is rich in omega-3 fatty acids which can be extremely beneficial for overall health, especially in people with PCOS and endometriosis. Packed with fresh and vibrant citrus flavours and a perfect blend of middle eastern spices, this dish is sure to be a favourite.

Number of servings: 6-8

Preparation and cooking time: 50 minutes (10 minutes preparation + 40 minutes cooking time)

 

Ingredients

  • 3 oranges 

  • 4 lemons 

  • 1 ½ tbsp zaatar 

  • 1 tbsp sumac 

  • 1 small chilli (chopped and deseeded)

  • ⅓ cup parsley (chopped)

  • 3 tbsp olive oil 

  • 1 tbsp pomegranate molasses 

  • Salt and pepper to taste 

  • 1 kg salmon fillet 

Instructions

  1. Begin by preheating your oven to 150 degrees celsius on the fan setting 

  2. Next, prepare your citrus: zest and juice both an orange and lemon and slice the remaining fruits into 2-3 cm thick rounds and set aside 

  3. To prepare your marinade, mix together the citrus juice and zest, sumac, zaatar, parsley, chilli, pomegranate molasses and olive oil in a small bowl 

  4. Mix until well combined and season to taste with salt and black pepper 

  5. Next, line a baking sheet with parchment paper and place your sliced citrus onto the baking sheet to create a ‘bed’ for the salmon 

  6. Place the salmon over the sliced citrus and cover with your marinade 

  7. Place into the oven to bake, this should take around 40 minutes for a large piece but be sure to check every 10 minutes after the 20 minute mark to prevent overcooking the fish 

  8. Once ready, take out of the oven and enjoy!

Top tips

  • The cook time on the salmon will vary depending on how large your pieces are. We used one large fillet however, if you do end up using smaller portions it will take around 15-20 minutes to cook. Be sure to check your fish after 15 minutes in the oven to prevent overcooking it. 

  • This salmon works great served with rice, potatoes, quinoa or any other grains of choice. Serve alongside your favourite veggies for a complete and balanced meal

  • Any leftovers from this recipe work really well in salads and sandwiches for quick and easy lunches the following day 

  • Sumac and zaatar are both popular middle eastern spices that you should be able to find in specialist middle eastern stores or larger branches of local chain supermarkets. If you are unable to find these spices, simply omit them and add in some mixed dried herbs for a similar flavour.
