โฃโฃAnother delicious ๐ฉ๐ฅ๐๐ง๐ญ ๐๐๐ฌ๐๐ ๐ซ๐๐๐ข๐ฉ๐ for you all today. When itโs mango season we have this often as it is a truly flavourful meal. Chickpeas for protein and fibre, mango for sweetness, cauliflower for a happy gut and all the herbs and spicesโฆ.go on have a go! โฃโฃ

โบ๏ธ 1 tsp curry powderโฃโฃ
โบ๏ธ 1 tsp sugarโฃโฃ
โบ๏ธ 1 ts ground mustardโฃโฃ
โบ๏ธ 1 tsp ground corianderโฃโฃ
โบ๏ธ 1/2 tsp ground turmericโฃโฃ
โบ๏ธ 1/2 tsp ground cuminโฃโฃ
โบ๏ธ 3 tablespoons olive oil more as neededโฃโฃ
โบ๏ธ 1 medium yellow onion thinly slicedโฃโฃ
โบ๏ธ 1 cup canned chickpeas drained, rinsed and warmed through slightlyโฃโฃ
โบ๏ธ 1 head of cauliflower cut into 1-inch florets, blanch for 2 minutes in boiling water and then pat dryโฃโฃ
โบ๏ธ 2 large mangoes peeled, pitted and chopped into 1/2-inch piecesโฃโฃ
โบ๏ธ 1 jalapeno stemmed, seeded and diced smallโฃโฃ
โบ๏ธ 1 cup chopped cilantroโฃโฃ
โบ๏ธ 2 tablespoons lime juiceโฃโฃ
โบ๏ธ 2 cups baby spinachโฃโฃ
โบ๏ธ 1 cup baby arugulaโฃโฃ
โบ๏ธ salt and black pepperโฃโฃ
๐๐๐๐๐๐:โฃโฃ
โฃโฃ๐ก Mix the curry powder, sugar, ground mustard, coriander, turmeric, cumin, 1/2 teaspoon kosher salt and 1/4 teaspoon of black pepper in a small bowl and set aside.โฃโฃ
๐ก In a large pan heat the olive oil. Add the onion and cook for about 6 minutes over high heat. Add the spice mix and turn the heat down to medium-low. Cook for another 6 minutes. Transfer to a large bowl, and add the chickpeas to the same bowl. Leave the pan over medium heat.โฃโฃ
๐ก Add the cauliflower to the same pan that cooked the onion adding more olive oil if needed. Cook until the cauliflower is coated in the remaining spice mixture and is cooked through (about 5 mins). Transfer the cauliflower to the bowl with the onion and chickpeas. Let sit at room temperature for about 20 minutes.โฃโฃ
๐กTo the bowl, stir in the mango, jalapeno, cilantro, lime juice, spinach and arugula. Toss so that the ingredients are evenly dispersed. โฃโฃ
๐ก Adjust seasoning to taste, serve, and enjoy!
