Recipe: Moroccan Inspired Traybake

Our Moroccan inspired traybake packed with fibre from the lovely veggies as well as healthy fats from the spicy tahini drizzle. It’s also a creative way of including cinnamon in a savoury dish, as we know cinnamon may help with some PCOS symptoms. A super simple, minimal mess recipe that packs lots of flavour and nutritional benefits!

Number of servings: Serves 4-6 people as a side dish 

Preparation and cooking time: 45 minutes total time (15 minute preparation + 30 minute cooking time)

Ingredients

4 small sweet potatoes 

4 carrots 

3 beetroots 

4 baby courgettes or 1 courgette 

2 bell peppers 

For the spice mix:

½ tsp cinnamon

½ tsp turmeric 

½ tsp paprika

½ tsp allspice 

½ tsp cumin 

¼ tsp cayenne pepper

For the tahini drizzle:

3 tbsp tahini

3 tbsp lemon juice 

1 tsp harissa paste

1 tbsp water

Instructions

  1. Preheat the oven to 200 degrees celsius on the fan setting (gas mark 6).

  2. Combine all the ingredients for the spice mix in a small bowl and set aside.

  3. Chop up all the vegetables into bite sized pieces. Place the sweet potatoes, carrots and beetroot into one bowl and the courgette and peppers into another. 

  4. Drizzle some olive oil over the vegetables in both bowls and toss to coat. Once covered in olive oil, add half of the spice mix into each bowl and mix until all the veg are coated in the spices. 

  5. Place the sweet potatoes, carrots and beetroot onto a large baking sheet and place in the oven for 15 minutes. 

  6. Once the 15 minutes are over, add in the courgette and peppers. Give the vegetables a mix and season with some salt and black pepper. Place in the oven for a final 15 minutes.

  7. While all the vegetables are in the oven, make the tahini drizzle by combining the tahini, lemon juice and harissa in a small bowl. The sauce will get very thick when you mix it but that's normal! Add in the water and stir until you get a creamy drizzle. 

  8. Once the vegetables come out of the oven, allow to cool for a few minutes before pouring over the tahini drizzle.

Top tips

  • This dish is a great way to use up any leftover veg you have sitting in your fridge at the end of the week. Feel free to substitute the vegetables we have listed for those of your choice.

  • This recipe makes great leftovers! Simply store the vegetables and drizzle in the fridge separately for 1-2 days. The leftovers make great additions to salads and wraps.
